First domesticated in Baluchistan (western Pakistan) about seven thousand years ago, cattle in the Subcontinent are of several varieties, including the humped zebu cattle (Bos indicus), often used for farm work, and many newer crossbreeds bred for milk production. Water buffaloes (Bubalus bubalis) also produce milk, with a higher fat content than cow’s milk. See also water buffalo.
