Dried Red Chiles

Chiles dry well and can then be kept for a long time. In autumn, from Bhutan to China, Nepal, and northern India, chiles, most often red cayenne chiles, are laid out on the ground or on flat rooftops to dry. Dried red chiles are sold in South and Southeast Asian grocery stores and most large supermarkets. We use those from Thailand or India and store them in a glass jar. The heat of dried red chiles varies, so be cautious when you start using powder from a new batch.
