From the Persian dumpukht, meaning “air cooked” (the Anglo-Indians had dumpoke, a dish of boned stuffed duck). Dum refers to a method of steaming in a sealed closed pot so that textures become tender and aromas blended. See Chicken Biryani, Dum Style, and Cauliflower Dum.
