Goa, Goan

Goa is the smallest state in India, located on the west coast 150 miles south of Mumbai (Bombay), just north of Karnataka. It was colonized by the Portuguese. The local cuisine is fish-rich and often flavored with coconut, and uses vinegar as a souring agent.
