An aromatic long green leaf that is used in Sri Lankan cooking, called pandanus in Malaysia (where it is used primarily to perfume sweets); pandan is the name sometimes given to it in Sri Lanka. The plant is Pandanus amaryllifolius, screw pine in English. Rempeh can be found in Sri Lankan groceries. Omit it if it’s not available; we know of no substitute.
