Widely called rava, the Hindi name, throughout the Subcontinent, semolina is coarsely ground hard wheat, the ingredient that the Italians call semola and that they use for making pasta. It is used in the Subcontinent to make the savory dish uppuma, to thicken puddings, and to make sweets such as halvah.
