A large cousin of the watermelon, eaten in savory dishes, as summer squash is. Winter melon is sold in large slices, wrapped in cellophane, in East Asian groceries. Look for melon with dark green peel and pale white-green interior, with tender flesh rather than hard. It is simmered in soups or used in quick stir-fries.
