The useful technique of peeling is discussed. The peeler alluded to there is that familiar tool whose double-edged blade pivots on pins set at each end. There are two versions of it: In one the blade extends away from a straight handle, in the other it is slung between the two ends of a triangular handle. They are equally efficient, but the latter model, which is the one used in Italy and is available also in the United States, permits a more comfortable grip and is easier to work with.
