Palate A fine wine, destined for ageing, can taste disjointed or unbalanced when young. The components - sweetness, acidity, tannin, alcohol and flavours - may seem separated. As the wine matures, these components start to marry. In the process, the flavours sometimes disappear for a while, in a stage which wine tasters often describe as “dumb”- or “closed”. Finally, everything comes together, so that the wine tastes in complete harmony or balance with perfect structure and flavour.
