Length This is one of the best ways to judge a wine’s maturity. Good length, when the flavour remains in the mouth for a couple of minutes after you have swallowed or spat out the wine, is indicative of a wine that will age well - provided it has good structure and fruit. As the wine ages, the length becomes shorter, and with time, the flavours will simply disappear.
