Amontillado A fino that has aged to develop a fuller flavour. An authentic amontillado is dry, nutty and concentrated, not unlike an oloroso - although often more elegant. True, unblended amontillado is difficult to find. It is often sweetened to be sold under a medium or medium-dry label.
