Commercial tawny port is made by blending red and white ports, but top-quality tawnies - such as 10 and 20 year olds - are blends of older red wines which are aged for long periods in casks. The long ageing period moderates the tannins and brings out a wonderful complexity of flavour. A good tawny port has nuances of figs, caramel, honey and dried fruits.
