Malmsey The sweetest Madeira. Made from the malvasia grape, it is honeyed and lush, with overtones of figs and chocolate. Very heady, strong and rich. Not cloying, as the sweetness is balanced by acidity.

All other Madeira is made from the grape variety tinta negra mole and is often labelled as dry, medium dry, medium sweet and sweet. EU regulations state that a wine named after a particular variety of grape must contain at least 85 per cent of wine made from that grape. Before 1993, some Madeira producers used the names of the noble varieties for their products, which were often inferior and often totally unrelated. This has also contributed to the decline in popularity of Madeira as a drink.
