You don’t have to be holidaying on the bloody Amalfi coast, wooing a chestnut-skinned local and eating fritto misto de mare to enjoy this mayo. It is amazing with any fried, greasy or fish-related sandwich. Replace the vinegar in the Perfect Mayonnaise recipe with the juice of one entire (unwaxed) lemon. To really pick up the piquant, you could even grate a little zest in the mayo too.
