Aioli we hear you cry. “Sort of”, we tentatively reply. Mayonnaise bolstered by the heat of pounded raw garlic cloves is addictive. Call it Arthur for all we care, we’re licking it from our fingers anyway. Add two pounded garlic cloves (chopped up tiny, covered in salt and mooshed with a knife or spoon) instead of the mustard in the beginning of the Perfect Mayonnaise recipe and Aioli is your Aunt. If using Hellmann’s or something add one clove to every four tbsp of mayo. It gets stronger and stonger as time goes on too.
