A Sandwich Shop staple. When you are cooking meat, be it a stew or a roast, keep some of the cooking liquid. Sieve it. And reduce it in a pan until it is a tbsp or two of thick, rich, sauce and then add this to a batch of the Perfect Mayonnaise.
