It is those wonderful Koreans again. This fermented soya bean paste is akin to miso. In fact, if that is easier to find, use that instead. Simply add a tbsp of the doenjang to the base of your Perfect Mayonnaise recipe instead of the mustard and proceed as usual. You might want to hold fire on some of the salt as doenjang (and miso) can be salty little critters.
