Fermented black soya bean, honey, doenjang & MSG mayo

It’s them gangster beans again. I get mine in Chinatown. They’re sometimes called Preserved Black Beans.
This makes a tiny quantity of bean paste so you might have trouble making it in a blender. Dust off the pestle and mortar if you’ve got one buried somewhere, or get a big chopping board out. Cut up 10 soya beans as small as you can and grind them until paste-y with the back of a spoon or the side of your knife. Tip a tsp of honey on them. Grind grind grind. Add a tsp of doenjang and do the same. Sprinkle some MSG in, as much as you’d add salt. Mix this into 2 heaped tbsp of mayo.
