This doesn’t mean load up on them. Instead, if you choose sweet and salty ingredients with depth and substance over plain sugar or salt, you can replace much of the flavor that oil contributes. For sauces, choose dates, maple syrup, or dark brown sugar instead of plain sugar to add a caramelized flavor. Pick olives, miso, or capers for salty richness. These additional layers will add complexity and ample flavor to your final dish.
