Baking or roasting vegetables and tofu or tempeh without oil can yield slightly drier results, since the fat in oil creates a barrier that locks in moisture. Putting pressure on food can help it retain moisture without using oil: When roasting tempeh, tofu, or any vegetable that can lie flat on a baking sheet, place one silicone liner underneath the food and one over it (or you can use two sheets of parchment). Then, place a second baking sheet right on top. This creates gentle pressure similar to a countertop grill or panini press (but you’re not going to get those grill lines) and helps to lock in moisture. It’s like a lid, but rests lightly on the food and heats it from both sides.
