Asafoetida is also known as hing. It smells pretty dreadful, but magically transforms to lend a buttery aroma to dishes once fried. You will often see it used as a substitute for onion and garlic in Hindu dishes, as it mimics their flavour. Often paired with fenugreek seeds, it is used to start off many vegetable dishes.
