Chocolate, made from cacao, is a very old spice that was used by the Mayans of Central America. The cacao beans are roasted and mixed with cocoa butter and sugar. It has a rich, spicy and nutty flavour, which develops on your palate as it melts. Use it in sweet and savoury dishes, and buy the darkest chocolate with the highest cocoa content for cooking.
