Fish cakes, pressed protein creations derived from pollock or haddock or other mild-to-flavourless fish, are there to add colour and texture. You can sometimes find them in the freezer case at Japanese food shops; if not, omit them. Defrost the frozen fish cakes and cut them into 3mm-thin slices.
