We use Dove’s gluten free flour in all our dietary cakes.
We add xanthan gum to replace the elasticity that gluten naturally provides in wheat flour.
Make sure you check your baking powder is gluten free as lots of them are bulked up with wheat flour.
If you are cooking for a friend that has gluten and/or wheat intolerances, you will need to clean out your oven. We hose our ovens out before baking any gluten/wheat free cakes. It’s amazing how much flour gets into the fan when you bake. Make sure you don’t cross-contaminate ingredients, utensils and surfaces.
