Adding Eggs to Melted Recipes

In some of our recipes (like the Chocolate Beetroot Cake or Whisky Cake) you add the eggs to a pan of melted ingredients. Make sure you check the temperature of the mix before you add the eggs – you need to be able to hold your finger in it. If you can’t, it’s too hot and the eggs will scramble.
