Mixture of substances that give off carbon dioxide when heated. Ordinary baking powder is composed of sodium hydrogen carbonate and an acid—for example, potassium bitartrate (cream of tartar). When the baking powder comes in contact with water, carbon dioxide is released and it acts as a leavening agent.
