Calcification

Formation of a hard calcium carbonate (chalk) shell on the outside of a foodstuff—for example, a pretzel. The chalk shell is formed by exposing the surface of the food to a basic solution of lye (sodium hydroxide) that can combine with the carbon dioxide in the air to make chalk.
