Japanese expression that means “minced meat.” Name used, for example, for imitation crab and shrimp meat. Normally made from lean fish and made up of 75 percent water, 15 percent protein, 6.8 percent carbohydrates, and 0.9 percent fats, of which 0.03 percent is cholesterol.
