A clear, colourless, aniseed-flavoured liqueur. It is consumed in Spain as a pick-me-up on a cold morning, as a little shot throughout the day, or mixed with brandy to make the aperitif sol y sombre (‘sun and shade’). Its strong licorice-like flavour makes it popular in the kitchen in sweet dishes.
