Denominación de Origen. Similar to the French Appellation d’origine contrôlée. A DO can refer to food just as much as wine. It’s a way of recognising that certain foods and wines come from a certain region and are grown and prepared in a certain manner. It’s a way of protecting food and wine traditions, amongst other things.
