Sherry lifts and brightens the food it is used in, while adding a hint of yeast and flavours of barrel age. I highly recommend buying Spanish fino sherry to cook the recipes where it is listed. If you can’t find fino, dry Australian apero (renamed from sherry) is a reasonable substitute.
