The very popular portobello mushroom, sometimes just known as the portobello, is pretty similar to the flat mushroom in size and texture, but has a brown, almost speckled colour to its cap. The skin across the cap also separates and breaks, giving the look of hen feathers. In addition to the substantial amount of vitamin D Agaricus bisporus contain, portobello mushrooms also have high amounts of copper and selenium.

The portobello mushroom is considered the most mature of the Agaricus mushrooms and it has a slightly stronger taste than the flat mushroom. They have provided that extra mushroom taste in our creamy mixed mushroom and tarragon soup recipe and are a good alternative to hen of the woods if you can’t find any. Clean portobello mushrooms in the same way you would flat mushrooms.
