Almonds (Prunus amygdalus) are native to central and western Asia and most certainly were a part of the cooking of ancient Persia. For Parsis, they are the most highly prized nut, a sign of bounty and prosperity, and a properly outfitted ritual tray, a ses, will usually have a few almonds on it for their symbolic value. They are also prized for their contribution to savory meat and chicken dishes and are a popular garnish or main ingredient in sweetmaking.
