This is the same as cayenne pepper, and is not to be confused with paprika or Tex-Mex chili powder. Chilly powders vary in color, heat, and fineness of grind. For Parsi purposes, we need one with good color, a fine grind, and moderate heat. It’s tempting to buy gorgeous large packets of the stuff, but unless you go through a lot of it, buy in modest amounts more often. Korean groceries sell excellent chilly powder, bright and fragrant. Ground chile, like ground anything, loses its spark and flavor more rapidly. Store it in a jar out of the light.
