Coriander Seed

Coriander seed is as intrinsic to the taste of Parsi cooking as its leaf is. The seed is ground into powdered and paste masalas, usually with its companion spice, cumin, both members of the parsley or carrot family, the Umbelliferae. Coriander seed is often said to have a citrus quality. See also Coriander Leaf, above.
