The large, bulbous tuber of Amorphophallus campanulatus, known as suran in Gujarati and zimikand in Hindi, is aptly named, for its size and shape resemble nothing so much as an elephant’s foot. It’s a popular starchy root vegetable in Bombay, where vegetable sellers will cut off just as much as the buyer needs. Every now and then, it appears in Indian shops in the United States, and if you’re not required to buy the whole thing at vast cost, it’s well worth trying. It needs to be peeled before cooking.
