When Parsis talk of limes, we think of what are known as Mexican or Key limes (Citrus aurantifolia). Yes, you can use Persian or Bearss or Silver or Rangpur limes, but the taste will not be that elusive thing, “correct.” Lemons are to be used only as a last resort.
