Molasseslike only in appearance, pomegranate molasses is simply the boiled-down juice. Parsis in India generally don’t use it, although it does play a part in modern zoroastrian cooking in Iran. In our house, we always have it on hand for marinades. Middle Eastern markets sell pomegranate molasses in several brands. My favorites are sadaf, more fruity, and Cortas. You can make your own by boiling pomegranate juice until it’s dark and thick.
