Grapes (Vitis spp.) were grown in ancient Persia, so we may assume that raisins were there, too. Raisins are partnered with almonds in parsi food categories. They appear on the ritual tray, the ses, as symbols of prosperity, and they’re used as lavishly as circumstances allow in garnishing sweet and savory dishes. We have so many types of raisins to choose from. Parsis go for the golden ones over the dark. Recently, we’ve been seeing brilliant pink raisins from Flame grapes. These are spectacular, and I buy them whenever they’re available.
