Rice, Surti Kolam

This fragrant, small-grained variety of rice comes from the area surrounding Surat in the state of Gujarat, where Parsis settled on arriving in India. Many people from the region prefer it to longer-grained basmati. I like having it on hand but do not see it as a substitute for basmati.
