Sambhar masala is one of the key spice mixtures in Parsi cooking. It is important to distinguish here between two similar-sounding items. There’s the sambhar of South Indian cooking, a lentil and vegetable soup, and there’s sambhar masala as used by Parsis. The masala sold to make the South Indian sambhar is different from the Parsi formulation. To make certain Parsi dishes taste both correct and delicious, sambhar masala is necessary, though it certainly isn’t used in every single savory thing.
