Sev can be either of two things in Parsi cuisine, an ingredient or a finished snack food. As an ingredient, it is a fine threadlike pasta made from wheat flour and used mostly for making sweets. The word sev also means an extruded seasoned chickpea-flour paste fried and eaten as a snack.
