Of New World origin, the sweet potato (Ipomoea batatas) must have become an instant success with sweet-loving Parsis, who take it even further by steeping cooked sweet potatoes in heavy, cardamom-scented syrup. Sweet potatoes in the Wedding Stew, for instance, can be any type of sweet potato you like, including the orange-fleshed ones mislabeled yams.
