Bombay Parsi households invariably have a bottle of strong cane vinegar for general use in cooking and pickling. In the United States, we can buy cane vinegar from Louisiana, the Philippines, Martinique, and India. In fact, you can now buy the very brand Parsis cherish, Kolah’s from Navsari, the stronghold of Parsi religion and traditional culture (see Sources). A good alternative is coconut vinegar from Sri Lanka or the Philippines. I always love the gentle sweetness of Japanese rice vinegar for Parsi food in instances where a darker product would affect the color.
