Sweet Peppers are similar to those sold in Britain, varying in colour from olive, pale or dark green, to bright green, like a card table felt, or vivid yellow or red. When buying them, pick an odd scarlet one to place among the green ones and bring out their brilliance.

Peppers have a sweet, piquant flavour, but their seeds are usually very strong and should be removed. One in forty will be truly fiery, so it is advisable to taste a small piece from every pepper before using it.
