Onions are usually very pale-skinned and white-fleshed. Many of the ones available here are, in fact, imported from the Middle East. Another favourite variety in the Middle East is the Italian onion, which has a cherry-red skin and a mauve-tinged, sweet, mild flesh, excellent raw in salads. Spanish onions are a good alternative.
