Potassium is essential for the normal functioning of heart muscles, kidneys, blood circulation and the nervous system, and also helps maintain fluid levels. Good sources are fresh and dried fruit, vegetables, milk and legumes; sodium helps maintain nerve and muscle function and normal fluid levels. It occurs naturally in most vegetables, and is often added in the form of salt.
