Toasted sesame oil is another useful addition to the store cupboard, particularly as it is high in protein. The oil is extracted from toasted sesame seeds, giving it a pungent and strong flavour, so mix it with other oils; a mere half teaspoon will be enough to flavour a salad. This oil is often used in stir-fries, but even then only 3-4 drops are used with a blander oil made from corn or sunflowers.
