Raspberry vinegar, sherry vinegar and Chinese black bean vinegar have unusual and delicious flavours that are well worth experimenting with.

Balsamic vinegar is made in northern Italy and is kept for ten years or more in wooden kegs made fom oak, chestnut, mulberry or juniper. It has a strong, dense flavour and is reddish-brown in colour. Use it in salads and sauces.
