I could never be without the lemon; I rely on its juice and zest to enhance many dishes. The peel of most citrus fruit is treated with a fungicide to add sheen. This can apparently be dissolved with gin or by cooking. I donโ€™t believe the amount we might absorb would be injurious to health.
